36 inches high), undercounter dishwashers are ideal for operations where space is at
a premium. For improved ergonomics, some operators choose to install these units on
a raised stand, which minimizes the need for staff to bend or crouch during operation
— a small adjustment that can have a meaningful impact on productivity and injury
prevention.
Undercounter machines are available in both high and low temperature models. High-
temp models sanitize with final rinse temperatures of 180°F (82°C) and often include
a built-in booster heater, while low-temp versions use chemical sanitizers to achieve
microbial safety at lower rinse temperatures. The choice between the two often comes
down to utility availability, energy goals, and the operator’s preference for chemical
versus thermal sanitization.
With their single front-facing door, undercounter dishwashers offer simple in-and-out
functionality. There is no need for clean or soiled dish tables, and the entire process is
compact and self-contained. This makes the unit ideal not just for traditional back-of-
house installs but also for front-of-house applications like bars, cafés, or satellite prep
stations where space and aesthetics matter.
Though they may resemble a household
dishwasher in form, commercial undercounter
units are designed for far greater efficiency. Most
complete a full cycle in just 30 to 90 seconds — a
dramatic improvement over the one-to two-hour
cycles typical of residential machines. Despite the
fast pace, these units deliver consistent results
thanks to powerful internal pumps and purpose-
built spray systems.
Additionally, undercounter dishwashers come
equipped with internal chemical pumps, allowing
for automatic dosing of detergent, rinse aid, and
(in the case of low-temp machines) sanitizing
solution. These pumps simplify operation,
reduce human error, and help ensure regulatory
compliance across shifts. Compact, efficient, and
surprisingly powerful, undercounter dishwashers
offer excellent value and performance for small to
mid-sized operations particularly when selected with workflow, utility capacity, and ware
type in mind.
