In the world of commercial warewashing, undercounter dishwashers offer the perfect blend
of compact design and high performance. Often resembling residential units in appearance,
these machines are engineered for speed, durability, and consistent sanitization — making
them a go-to solution for bars, cafés, bistros, coffee shops, and satellite service areas. While
small in size, these units pack serious capability. Cycle times typically range from 30 to 90
seconds, depending on soil load and cycle setting, meaning they can turn over multiple racks
of dishes in a fraction of the time a household dishwasher would.
One of the most notable advantages of undercounter dishwashers is that they are typically
the only commercial dishwashing option that does not require a dedicated Type 2 condensate
hood. While high-temperature models do produce steam, the volume is generally low enough
— and the release contained enough — that local health and building codes often exempt
these units from mandatory ventilation. That said, confirming with your local inspector is
always a smart move, especially when dealing with high-temp installations.
