A key difference between display cases lies in how the cold air circulates in the box. A “forced air”

system uses fans to move air around product. A gravity coil system is based on the principle that cool

air drops, and therefore putting the coil at a higher level compared to the product will allow the cold air

to naturally fall over the product.

Both systems have their place in commercial foodservice, In an environment where the door is

frequently opened and the product is quite moist (like salads), forced air works great. In a butcher shop

environment where product is typically uncovered, fans will inevitably dry out cuts of meat. If you have

ever been to a butcher shop or bakery where their products are covered with plastic wrap it is generally

because their forced air cooler is too aggressive for their products.

Shelving type: wire, glass or metal shelves are typical in a display case. Manufacturers generally

have a standard and upgraded option.

Style: Clean and Modern or Retro and everything in between. Display cases come standard in white

or black and can be upgraded to stainless steel. Some manufacturers offer custom lamination or

cladding to match a variety of decors. In addition, depending on the manufacturer, glass fronts can

be curved or flat. Some open for ease of cleaning as well.

Lighting: LED lighting has become industry standard, still the temperature of the light is an important

factor to display products properly.

End Panels – the ability to join units together (multiplexing) to form a longer run is often an important

consideration for operations that have a wide-variety of product to display.
