Deli cases are specifically designed to display and store a variety of deli items, including meats, cheeses,
prepared salads, and sandwiches. Key features to consider are:
It’s essential to understand what product will be stored in the unit. A butcher shop that displays fresh
cuts of meat, for example, will prefer a “gravity” system of cooling (see below) to minimize the amount
of moisture loss and drying of cuts. On the other hand, a deli displaying various salads in bowls may
prefer a forced air unit to circulate the cold air.
Deli cases come in full service, self-service, and open-air configurations. Full-service cases require
employees to serve customers from behind the unit. Self service units allow customers to serve
themselves by opening a glass pane. Open-air cases are self service units without any glass cover.
