Considerations When Selecting a Rack
Type of Ware
Are you washing delicate stemware,
heavy-duty trays, or everyday
plates? Wares must sit securely
within the rack. Use glass racks
with compartments to prevent stem
breakage, and peg racks for stability
with dinnerware or
prep tools.
Rack Size Compatibility
Most commercial dishmachines —
including undercounter, door-type, and
conveyor models — are designed to
accommodate standard 20” x 20” full-
size racks. Some machines may allow
half-rack (10” x 20”) inserts, especially
for smaller units or bar setups. Confirm
machine compatibility before ordering
racks.
Height of Items
Glasses or utensils that are too tall
may be damaged by spray arms or
fail to clear the machine’s ceiling. Use
extender racks or deeper compartment
models for tall items.
Drying and Stacking Eficiency
Look for racks with open sides and
bases to allow better air flow and
faster drying — especially important
in ventless machines or low-temp
systems without heated drying.
Stackable designs help conserve
dishroom space.
Ergonomics & Handling
Dishracks should be easy to grip, slide,
and lift — especially when fully loaded.
