Any refrigeration unit requires air circulation to “breathe”. The air intake and exhaust areas

must be kept free of obstructions and items that may interfere with the operation of the

unit. Putting a Sandwich table in line with the cooking equipment may seem like a good idea

in theory; however, it is setting the unit up for failure with grease laden vapours and hot air

being drawn in to the system and affecting the longevity of the equipment. When doing your
