Top-mount units are generally recommended in areas of high heat and humidity, like for example
near the cookline, since these units release the hot air created by the refrigeration system
from the top, away from hard-working employees. Unbearably hot conditions make for a very
unproductive work environment. Bottom-mount units are typically seen away from the kitchen
and come with the added bonus of providing extra storage space at the top for boxes of non-
perishables.

Reach-In Door Types
By far the most common type of doors found on reach-ins are full-size solid doors. However,
many half-door options exist such as the Traulsen G11010. Half-doors may provide for better
organization and accessibility, reduced cross-contamination, and improved temperature control
since different sections of the fridge can be accessed without disturbing the temperature of the
entire unit.
Several manufacturers offer an option to swap solid doors with glass doors (or even glass half-
doors). Glass doors offer greater visibility to staff. However, they are less common than solid
doors for a few reasons:
Solid doors provide better insulation and energy efficiency;
Glass door units tend to be more expensive; and
Glass doors require more frequent cleaning to maintain their appearance.
