Air-cooled machines, on the other hand, use air, like standard refrigeration, to draw the heat from the
condenser and evacuate that from the system. Front and side breathing machines are noted as such
to ensure proper ventilation and maximum airflow for the longevity of the system. The air-cooled
machines are much more energy efficient and many are Energy Star rated.
The fact is, ice is food. We drink it melted or we eat it in ice form and as such, we need to
know how to handle it!
TIPS for handling ice:

Don’t touch the ice direct with bare hands
•
Avoid using a glass a scoop – this can break in the ice, causing a complete clean out of
the ice bin, rinse and refill – a major labour intensive job

Cold temps caused by ice do not kill bacteria that cause food-borne illness – ensure you
are not cross-contaminating your ice with other products
•
Always use a dedicated ice tote or bucket when transporting ice
•
Wash your ice tools daily
