Commercial Merchandising Freezers are offered in numerous shapes and sizes. Manufactures of

Glass Door Merchandisers, covered in an earlier section, generally offer the same units in a freezer

model (swinging door only, since sliding doors don’t work well for freezers). The factors we’ve already

discussed of attractive glass displays, LED lighting, adjustable shelving, energy efficiency all apply

equally to freezers. But the key factor with freezers is maintaining the temperature appropriate for your

product.

General Frozen Foods: For items like vegetables, meat, prepared meals, the recommended storage

temperature is -18°C to -23°C (0°F to -10°F);

Ice Cream and Frozen Yogurt: These should be stored at temperatures between -20°C to -29°C (-5°F

and -20°F) to maintain their texture and prevent ice crystal formation;

Gelato: Gelato is typically stored at slightly higher temperatures than ice cream, around -12°C to -6°C

(10°F to 20°F), to keep its softer, creamier texture.
