A booster heater is a dedicated heating device used in commercial dishwashing to

raise the final rinse water temperature to the required sanitizing level — 180°F (82°C) for

high-temperature machines. Achieving this temperature is essential for meeting NSF

sanitation standards and ensuring that dishes are not only visibly clean but hygienically

safe for reuse.

While the building’s standard hot water supply may only reach 120°F to 140°F, the

booster heater “boosts” that water to the higher temperature required for thermal

sanitization. Whether integrated into the dishmachine or installed externally, the booster

heater is a critical component of any high-temp warewashing system.
